Vegan overnight oat recipe

IBS friendly and VEGAN


Makes: 1-2 portions

Prep time: 2 mins

Cooking time: Overnight


1 cup of oats

1 Tbl of chia seeds

1,5 cups of milk (almond milk or rice coconut milk)

1 cup of frozen blueberries or other berries

sprinkle of cinnamon


Let oats, chia seeds and liquid soak overnight, mix with a blender in the morning for a consistent texture. Don’t mix if you like your breakfast with a bit of crunch and a bit more rustic. 


Top with flax seeds for an additional gut benefitting effect. You can also eat this on the go.


Prepare two bowls at the same time to save time, store in the fridge with a lid tightly screwed on. Try mixing it up by adding mango, cranberries or apple puree instead of blueberries. If you add something sour like cranberries, mix in one banana to balance the taste.

Nutty Oat Bar

IBS friendly and VEGAN

For IBS, please go easy on the cashews.


Makes: 3-4 portions

Prep time: 5 mins

Cooking time: 15 mins


360g - Apple Banana Puree (Biona Organic)

2 cups - Rolled oats

1 cup - Nuts and seeds (almonds, cashews, chia, flax)

Handful of dried, unsweetened cranberries


Make a batch of these granola bars, with no added sugar, in advance for a healthy breakfast on the go.


Preheat the oven to 200C. Mix the oats, fruit puree and seeds together in a bowl. 

Bake for 15 minutes on the lower level of the oven to avoid burning.

Once cooked, transfer to a wire rack to cool, then cut into six bars.



  • Press the mixture into the baking tin well to help the binding process, but not too hard or it may affect the flavour.

  • If your first batch is more crumbly than you'd like, try increasing the amount of fruit puree to moisten the mixture before baking.
